Meal Prep 07/04/16

Yesterday was Meal Prep Day with Amber again!

Our Menu:

1lb ground beef each batch. 1/2 and 1/2 seasoning with packaged Lawrys Taco Seasoning and Taco Bell Taco Mix. Tortillas and chihuahua cheese.

Mango Salsa:
3 Mangos, 1/2 large Tomato, 1/2 Jalapeno, 1/4 Onion, Handful Cilantro, 2 Bell Peppers, 1/2 Cucumber, 1 Juiced Lime and Salt.

Stuffed Shells:
Jumbo Shells. Pasta Sauce. 1/2 with just ricotta, provolone, and mozzarella cheese (2:1:1 ratio). The other half with the rest of the cheese and added dill, Cucumber, and olives. Topped with Provolone and Mozzarella.

Egg Muffins:
Eggs with Dill. Half with Provolone on top.

Hard boiled eggs, grapes, strawberries, and bell pepper.

This week we made an extra batch of the tacos and stuffed shells because Dylan threw in on this one! With two entrées that he’d actually eat I was more than happy to make him meals as well. In fact, I was downright giddy when he asked for Seconds. Take that, takeout!

Total for three (!) people for nearly two weeks came out to $80. Talk about a small grocery bill!

Shells came out better than last time, especially the ones with dill and cucumber. I haven’t added anything into My Fitness Pal specifically from this week, but the entries should be close to similar from the last time I made these.

I have the shells frozen for next week and exciting tacos to look forward to all this week. The salsa is just going to keep getting better with time.
