Meal Prep 05/22/16

This week’s meal prep features guest-star Amber! With two people working, prep took half the time. We managed to complete all of our meals in about 5 hours, including shopping.

The Menu:

  • Tacos with Mango Salsa
  • Mango Pork Chops with Mashed Potatoes
  • Peanut Butter Granola
  • Hard Boiled Eggs

This week was mostly done without recipes. Tacos are easy, and foil baked pork chops are pretty much the same no matter what you throw in with them. There is a bit of a twist on the mashed potatoes, though. We cooked up some cauliflower and mashed it into the potatoes. Extra veggies and you can’t even tell they’re there.

  • Tacos:
    1lb Ground Beef
    4tbsp Penzys Tacos Seasoning
    3/4cup water
    With chihuahua cheese – shredded, and mango salsa inside a flour tortilla.
  • Mango Salsa:
    2 Mangos
    1/2 Cucumber
    1/4 Red Bell Pepper
    Jalapeno to taste
    Lime juice and Salt
  • Pork Chops:
    Pork Chops, lightly seasoned, topped with Mango Salsa.
    Baked in foil.
  • Mashed Potatoes:
    Small Red Potatoes
    1/2 Head of Cauliflower
    Roasted Garlic
  • Peanut Butter Granola:
    2cups Rolled Oats
    1tsp Vanilla Extract
    4tbsp Peanut Butter
    4tbsp Honey
    Baked
  • Snacks:
    Hard Boiled Eggs.
    Yogurt
    Strawberries and Grapes
    Red Bell Pepper and Cucumber

All total, we spent about $90 and have enough food for a week, maybe even a week and a half, for two people. Our shopping list was super short, with produce being the most to get. I like making sure that the main meals share ingredients to cut down on cost and prep time.

    Serving: 1 pork chop slightly larger than deck size, and 1 serving of Mango Salsa
    Calories: ~200
    Carbs/Fat/Protein: 9.5g / 9.3g / 23.4g
    Sugar: 8.1g
  • Mashed Potatoes:
    Serving: Estimated for 8 servings total.
    Calories: ~200
    Carbs/Fat/Protein: 27.8g / 6.7g / 6.6g
    Sugar: 0.6g
  • Peanut Butter Granola:
    Serving: Estimated for 6 servings total.
    Calories: ~250
    Carbs/Fat/Protein: 35.4g / 10.3g / 6.2g
    Sugar: 15.3g

 

We’ll definitely be working together more in the future; doing this by myself would have taken twice the time and only about 30 bucks less. Now two people are getting fed and saving even more! I do need to look into better containers to store everything. My mismatched pile of Tupperware is great, but cumbersome sometimes. I’d like to have nice three compartment trays that I could use to make to-go meals instead of storing so much in bulk.

Funny, I just cooked a bunch of food and now I’m already thinking about the next menu.
